In from Daisy, our resident foodie: Summer Salad with Fresh Corn, Tomatoes, Avocado, and String Beans
 

Take advantage of the season’s best produce and prepare a simple, one-dish meal on a hot day – perhaps without even turning on the stove.  There really aren’t any rules —  just toss your favorite fruits or vegetables in the salad dressing of your choice and you’re done!

On my trip to the farmers market, I found this delicious combination of ingredients to make a summer salad — sweet corn, juicy cherry tomatoes, ripe avocados, and crisp green and yellow string beans.  I briefly blanched the corn and beans and then tossed everything in a tangy homemade vinaigrette, for a light and healthy meal . . . It’s that easy!
